    Howdy!

    My Wife puts left-over Mashed Potatoes into a Tupperware container and
    keeps it in the refrigerator to make "Potato Cakes" the next day.

    She adds some Flour to some of the left-over Mashed Potato's,

    Pats some of the mixture in Her hands to make it Flat and puts in it the
    Frying Pan on the Range to Cook some of them.

    It ain't Pancakes, IT'S Potato Cakes!

    Any other ideas for left-over Mashed Potatoes?

    If you are a bread maker, they are often added to bread recipes.

    Title: Potato Rolls (1 1/2 LB)
    Categories: Abm
    Yield: 24 rolls

    3/4 c Water
    1 Egg
    3 c All purpose flour
    1/2 c Plain mashed potatoes,cooled
    1 ts Salt
    1/4 c Shortening
    1/4 c Sugar
    1 1/2 ts Yeast

    Place all ingredients in bread pan, select dough setting, and press
    start. When dough has risen long enough, the machine will beep. Turn
    off bread machine, remove bread pan, and turn out dough onto a
    heavily floured board.
    : Gently roll and stretch dough into a 24" rope. With a sharp
    knife, divide dough into 72 pieces.
    : Grease two 12 cup muffin tins. Roll each piece into a ball
    and place 3 balls in each greased muffin cup. Cover and let rise in
    warm oven 30 to 45 minutes until doubled.
    : Preheat oven to 400. Bake 12 minutes until golden. Remove

    Title: Mashed Potato Patties
    Categories: Easy, Leftovers, Tested
    Yield: 2 Servings

    1 c Mashed potatoes (left over)
    2 tb Shredded carrots
    1 tb Shredded onion
    3 tb Egg liquid (micro leftover)
    1 tb Corn meal
    ds Salt & Pepper to taste
    1/3 c Panko crumbs
    3 tb Peanut oil or more

    Easy use for leftover mashed potatoes.

    You can add shredded cheese, green onions to the mixture if you want.
    Use a couple tablespoons.

    Break egg into small pyrex cup, scramble. Set aside.

    To potatoes add carrots, onion, 3 tb egg mixture, and corn meal. Mix
    throughly and divide into 4 small patties.

    Measure out panko crumbs and set aside.

    Brush egg mixture over top side of patty. Sprinkle top of patty with
    Panko crumbs, press in to make sure they really stick to the potato.
    Turn patty over and brush that side with egg liquid, sprinkle with
    Panko and press in to make sure they stick.

    Choose a large teflon fry pan (do not crowd patties). Place oil in
    pan and heat over medium heat (No 6 on my stove). When oil is hot
    enough place patties into pan, turn down to lower heat (No 3 on my
    stove) and fry for 3 minutes. Flip, turn up heat again to slighly
    higher, add slight amount of oil if necessary. Cook another 3
    minutes until second side is golden brown.

    Tested 1/15/16 - very nice. Crisp on outside, fluffy on inside. Will
    certainly make this again. Good use for those leftover mashed
    potatoes.

    Title: Spudnuts
    Categories: Doughnut, Bread, Dessert
    Yield: 1 servings

    2 Eggs
    1 c Sour cream
    2/3 c Sugar
    2 c Unbleached white flour
    2 ts Baking powder
    1 ts Baking soda
    1/2 ts Salt
    1/4 ts Cinnamon
    1/4 ts Nutmeg
    1 c Mashed potatoes
    -oil for deep frying
    -additional cinnamon &
    Granulated sugar

    Beat the eggs into the sour cream and stir in the sugar. Mix the
    flour well with the baking powder, soda, salt & spices. Mix
    together lightly the sour cream and flour mixtures with the
    potatoes. Drop the dough by teaspoonfuls into deep skillet or
    wok in which the oil is hot but not smoking (370 degrees) and fry
    the balls until crisp. Drain on paper towels & roll in a mixture
    of cinnamon and sugar.

    Makes about 36

    3/4 c Mashed Potatoes *
    3/4 c Potato Water
    2 1/4 tb Vegetable Oil
    3/4 ts Salt
    1 tb Sugar
    3 c Bread Flour
    1 1/2 ts Yeast
    2 ts Wheat Germ

    * Mashed Potatoes = Use boiled or instant, but add minced onion,
    parmesan cheese and horseradish. The dough is very liquid and the
    bread will not rise very high but it makes a chewy bread similar in
    texture to a knish or a potato kugel.

    A cursory search of my database gives me a bunch. Here are the first
    five or six ....

    Title: Poutines Rapees
    Categories: Vegetables, Desserts, Pork
    Yield: 6 Servings

    1/2 lb Salt pork, fatty
    4 Potatoes; cooked & mashed
    10 Potatoes; finely grated
    Salt & Pepper

    "For many Acadians living in southeastern New Brunswick,
    Poutine Rapee, potato dumpling dish with a mixture of
    seasoned pork in the centre, is considered a national
    dish. In other parts of Acadia, these delicacies are
    prepared without the meat and fish is sometimes added to
    fricot. Although the greyish colour and gluey texture of
    the poutines makes them appear somewhat unappetizing,
    their taste more than compensates for their unattractive
    appearance."

    Soak the pork overnight in cold water to remove the salt,
    and cut into cubes. Extract the water from the grated
    potatoes by putting them in a cotton bag and squeezing
    vigourously. Mix the mashed potatoes with grated potatoes.
    Season with salt and pepper. Roll the potato mixture into
    balls resembling small snowballs.

    Make a hole in the centre of the potato ball and add 1
    Tbsp of the salt pork. Close the hole and roll the
    poutines in flour. Gently drop the poultines 2 or 3 at a
    time, into a large pot of boiling salted water, ensuring
    that the water is kept at a rolling boil.

    Simmer the poutines for 2-3 hours. Eat the poultines hot
    with butter, salt and pepper, or as a dessert with sugar
    and molasses.

    Makes: 6 Poutines

    Title: Kvasivska Selianska (Village Soup)
    Categories: Soups, Dairy, Breads, Potatoes
    Yield: 6 Servings

    2 c Beef or pork stock
    1 c Sour cream
    1 lg Egg
    2 tb Flour
    3/4 c Mashed potatoes
    1 ts Dill; fresh, chopped
    2 c Sauerkraut juice
    1/2 c Rye bread croutons

    Bring stock to a low boil, add the sauerkraut juice.

    Mix the sour cream, flour, and egg. Add some of the
    boiling stock-juice to the pot and simmer for 4
    minutes. Add the mashed potatoes and sprinkle in the
    dill. Cook for 3 more minutes.

    Serve in bowls and sprinkle the croutons liberally.

    She adds some Flour to some of the left-over Mashed Potato's,

    I'll add an egg or two (depends on amount of potato) and onion--either
    fresh or dry flakes. Sometimes instead of using all flour for
    thickening, I'll use bread crumbs. It's really a "no brainer" thing; my
    mom did it from time to time but with 5 of us kids, there usually
    weren't too many leftover potatoes. (G)

    After they're cooked, ketchup is good as a topping. This is one of the relatively few times I grab the bottle and use it.

    Topping for a shepherd's pie? Do a "throw together" one of browned meat (hamburg works fine), veggies like carots/celery/onion/maybe peas,
    potato chunks and gravy mixed & poured into an unbaked pie shell. Top
    with mashed potatoes, bake until hot and browned.
