    seem explainable; others are totally incomprehensible.

    Baby Broad Bean and Cured Ham Omelet
    Category: Tapas
    Yield: 24

    250 g broad beans
    6 Tb olive oil
    1 finely chopped small onion
    50 g diced cured ham
    6 lightly beaten eggs

    This thick Spanish omelet made with small broad beans
    is popular in Murcia (southeastern Spain), where many
    of the beans canned for export are grown. It cuts into
    squares well for tapas.

    Drain the beans. Heat half the oil in a heavy-based
    frying pan and saute the onion and ham in it, adding
    the beans after a few min. Cook everything together 5 min.
    Cool slightly and mix into the eggs. Wipe the pan clean,
    heat the remaining oil in it, pour in the eggs and make
    a thick round omelet, turning halfway through with the
    help of a plate or large pan lid when the underside is
    golden. Cool slightly and cut into squares.

    They might just have some other use for the fat... rather than eating it straight... not that I have any issues with eating it straight... been
    known to do it myself... ;)

    Probably mine.... I noticed that the hor d'oevres that were being served (partly to keep hungry children at bay while waiting for the meal
    proper) were being devoured... and then when it came time for the
    sit-down meal, many (even most) weren't all that hungry any more... So
    my thought was why bother with the meal... (G) But there were others
    noticing the same thing.... :)

    Or at least that was the plan... there are always some people in the

    Well, usually it wasn't a roast anyway.... more likely a turkey... and
    what gets added now is often soups, and/or a turkey.... Depending on
    who has the bee in the bonnet for what.... (G)
