I might think of it sometime I eat there... ;)
Might learn something, such as "don't believe everything
on the Internet." Although I can't imagine any sensible
culture not making full use of a rich source of nutrition
    as fat is.
They might just have some other use for the fat... rather than eating it straight... not that I have any issues with eating it straight... been
known to do it myself... ;)

What I'd do, of course, would be to render it out and
use it for cooking, saving the cracklings for my best
    friends or customers and me.

There was Horowitz, who had to have his shrink
sitting in the same place in the hall every time
    he played a concert.
To say nothing of the many other rituals various stars have...
All kinds of people have them; some of their origins
seem explainable; others are totally incomprehensible.
    Often even to themselves.... ;)

That's the shrinks' bread and butter.

That was told me by a German viola player.
It would have had to be a viola player, to get away with it... ;)
    It's a time-honored rule that only a member of
the affected class can use a derogatory term for
    that class.
    But of course... :)
Though now even people who would traditionally be
given a pass are now zinged out in public.
It's a different world in some ways....

That it is, and to my taste in many ways worse.

True... with their tapas... I guess, too, it probably has been decades now since we started doing just appetizers instead of a big sit-down
meal for my family's Christmas celebrations...
    Whose idea was it originally?
Probably mine.... I noticed that the hor d'oevres that were being served (partly to keep hungry children at bay while waiting for the meal
proper) were being devoured... and then when it came time for the
sit-down meal, many (even most) weren't all that hungry any more... So
my thought was why bother with the meal... (G) But there were others noticing the same thing.... :)

If the small plates are good enough, there's no need for
big plates. Of course, the reverse would also be true.

Or at least that was the plan... there are always some people in the family that think that we should have something more, and bring that instead... :) So now it's a cross between appetizers and a buffet.. ;)
At least there's variety. I am guessing that some don't
feel comfortable at holiday time without a nice big
    roast on the table.
Well, usually it wasn't a roast anyway.... more likely a turkey... and
what gets added now is often soups, and/or a turkey.... Depending on
who has the bee in the bonnet for what.... (G)

I count a roast turkey as a roast and consider it one of
the few poultry dishes worthy to compete with beef. It
would lose, of course, pretty much every time.

Another excellent way to utilize it... :) Our 4th Sunday group is
going there tomorrow... I might have a chance to ask... although I might consider the squick factor of others in the group before I do... ;)

Yup, even when they've no clue, either... ;)

True.... the sit-down meal for a crowd our size though was a larger
operation than just getting something less elaborate out, though...

Ok... and of course... ;) How about a roast duck or goose....?
