    I've been making something like this for ages and only recently bothered to MM them. I was making a basic version of these before I moved out from home but then it was a simpler fat and spicing.

    4 c Cubes/cut potatoes
    1/2 c Chopped onion
    3 tb Bacon/sausage/duck fat
    3 tb Olive oil
    1 tb Summit County Seasoning mix

    This is a real down home comfort food that is simple to make and
    requires little tending.

    Summit County Seasoning is a salt free mix of black pepper, garlic,
    tomato powder, red and green bell peppers, onion, fennel, arrowroot,
    lemon peel, and majoram. Available at www.savoryspiceshop.com.

    Folks, this is one of several types of simple potato cooking I do
    here. I like this particular blend well though today's batch was a
    mix of other spices that Charlotte made up with: powdered garlic,
    black ground pepper, roasted garlic, black pepper, mildish mexican
    red pepper and mexican oregano.

    What you want is either smallish cubes or a french-fry (country,
    thicker) cut potato. It's best to use a somewhat waxy type like a
    red or yukon gold so they don't fall apart when turning like Idaho's
    tend to. Aim for 1/2 inch cuts in cubes or sticks so they cook
    evenly.

    Add fat to pan (I use cast iron for this) then add the rest and give
    it a good toss. Let heat on low. I use a diffuser as I have a gas
    range. I cover it with a pot lid set aside to allow steam to escape.

    Turn about every 15 minutes. How long only depends on if you want
    them soft or somewhat crispy.

    Alternative additions: Don't be bashful! Mushroooms, Bell Peppers,
    Bannana peppers, roasted tomatoes and other things can go nicely here.
