That's probably spray-on sulphites. Packaged foods like bacon have
to be labelled "contains sulfites" or "added sulphites". Both the
the FDA and CFIA have prohibited the use of sulfites to maintain the
color and crispness of vegetables in salad bars for some time now,
but apparently some other food services still use such sprays and
don't disclose.
I'd always ask and really come down hard on anyone who ever lied to
me.

Title: Easy Onion Soup with Stilton
Categories: British, Soups, Beef, Cheese, Beer
Yield: 1 Serving
1 oz Butter per person
2 md Onions per person; chopped
Salt
Black pepper, fresh ground
1/2 pt Each beer and stock
Fresh thyme or
Winter Savory
Stilton
Croutons
In a heavy saucepan heat the butter and saute the onions slowly until
golden brown. Season with salt and pepper.
Add the liquid and bring to a boil. Adjust the seasoning and add
thyme. Cover and simmer for 30 to 40 minutes.
If you are using Stilton rind, grate it finely. Otherwise, chop the
cheese. Add it half way through the cooking and stir well.
Serve with croutons.
