    Hi everyone,

    Turns out I will not be able to make it to the picnic this year but for a good reason: I have a tenative job offer as a housekeeper at my local VA hospital (James H. Quillen VAMC). I am just waiting for the background check to come back and I am not expecting any issues. This is a permanent, full-time federal
    job.

    So maybe next year I will finally be able to make it to a picnic...

    Title: Middle Banks Nuggets
    Categories: Seafood, Breads, Vegetables, Cheese
    Yield: 5 Servings

    1 1/2 lb Whiting; in 9" X 2" strips
    1 3/4 c Bread crumbs
    2 tb Chopped parsley
    1 cl Garlic; minced
    1 ts Salt
    1/4 ts Black pepper
    6 tb Stewed tomatoes
    1/4 ts Parmesan cheese; grated
    2 lg Hard cooked eggs; in 6 pcs
    - each
    12 sl (2" wide) Provelone cheese

    Combine bread crumbs, parsley, Parmesan, salt & pepper
    and garlic. Dip fish in oil and roll in bread crumb
    mixture. Place 1 strip of Provelone, 1 wedge of hard
    boiled egg, and 1 tb of stewed tomato on the fish.

    Roll jelly-roll style and place upright in a greased
    dish. Spoon any remaining tomato over the top and
    sprinkle with rest of crumbs and oil.

    Bake covered @ 375°F/190°C for 30 minutes and uncovered
    for 5 minutes more.

    Yes. Thankfully, they have worked with me. They said if I make a payment in two weeks (which I will be able to), they will put into forbearance the missed payment from last month. If I am going to declare bankruptcy I won't be able to refinance so I might as well make peace with what I am doing now and just keep going.

    hospital as an "orderly". But it was known as 'being a pan handler'.

    It's easier on all when it works out that way. You stay away from the show-leather express, the bank doesn't have to snag your ride, refurb
    it and flog it to the highest bidder - and then try to collect the
    difference between what they got and what you owed on it. Been on both
    ends of that equation.

    Title: Banker's Delight Shrimp Rolls
    Categories: Seafood, Citrus, Sauces, Marinades
    Yield: 4 Servings

    1 1/4 lb Medium shrimp; peeled,
    - deveined

    MMMMM--------------------MARINADE-----------------------------------
    1/4 c Olive oil
    1 tb Minced garlic
    1 tb lemon juice
    1/2 ts Kosher salt

    1/4 c Peeled, seeded, chopped
    - cucumber
    2 tb Minced fresh parsley

    Salt
    1/2 c Grape tomatoes; quartered

    1 lb Loaf soft French bread
    4 tb Unsalted butter; melted
    Shredded lettuce

    This wallet-friendly spin on the classic New England
    lobster roll increases the flavor with herbed mayo and
    toasted baguette slices, but lowers the price by using
    large shrimp instead of pricey lobster.

    Preheat grill to medium-high.

    Combine oil, garlic, 1 Tbps. lemon juice, salt & pepper
    for the marinade in a bowl. Add shrimp and marinate 5-10
    minutes.

    Pulse mayonnaise, cucumber, parsley, chives, tarragon, 2
    tsp lemon juice, sugar, and salt for the mayonnaise
    together in a food processor until cucumber is finely
    chopped. Set aside 1/3 cup of the mayonnaise mixture.

    Grill shrimp until cooked through, 1-2 minutes per side.
    Coarsely chop shrimp, then stir into remaining mayo,
    along with tomatoes.

    Slice bread into rolls, brush outsides with butter, and
    grill on both sides until lightly toasted. Spread insides
    with some reserved mayonnaise; fill each with lettuce and
    1/4 of shrimp mixture.

    Makes: 4 sandwiches

    Yeah, I will be thinking of you all while I am at work. At least it will be good weather for the picnic!

    And it will be about time... (G) It might be back in Rochester/Newark next year, for the sake of getting the Fords there...

    By that time, if all goes well, I should have accumulated enough paid leave not
    to worry about it. I am going to keep the Caravan so with a new set of four tires and a brake job on all four wheels, I should be ready to come up there. It's really not that bad of a drive though I will not push it and try to come up in one day. This time around, I'd probably drive up to Winchester, VA or possibly Harrisburg, PA and stop for the night to continue the drive the next day.

    Of course, if I have a motorhome, I could just stop anywhere I want within reason, but I'd rather not push the envenlope. :D

    In any case, it wouldn't be out of the question for next year. Unfortunately, for this year's plans, the car accident in February seriously derailed my plans.

    Full time federal job has some pretty good benefits, starting with
    health insurance and retirement.

    cut this down by four or more for just yourself. I would skip the
    lettuce and instead put on some of our muffaletta olive salad mix.

    Title: NEW YORK SUBMARINE SANDWICHES
    Categories: None, Sandwich
    Yield: 4 Servings

    4 (6") or 2 (12") hoagie
    Rolls
    Olive oil
    Red wine vinegar
    Italian seasoning
    12 sl Provolone cheese
    12 sl Boiled ham
    12 sl Hard salami
    2 sl Tomatoes
    Head shredded lettuce
    1 sm Onion -- sliced into thin
    Rin

    Split rolls. Sprinkle liberally with olive oil. Then vinegar and
    then the Italian seasoning. Layer 3 slices each of the provolone,
    ham and salami on each roll. (Or 6 each on the 12 inch rolls.) Place
    sliced tomatoes, onions and shredded lettuce on top of cold cuts.
    Slice 12 inch rolls in half to serve. Serves 4.

    That's precisely why I am hoping to get this job. I'm about 20 years out from retirement, hopefully, and would like to get myself set up to be able to enjoy retirement. I figure if I can do this the right way now, I'll be able to take care of myself later.

    I am still waiting to hear back on the background check. It's been two weeks now.

    I'll definitely check out your sub recipe too. Sounds good.

    With your previous job taking you to Williamsport regularly, you did get
    used to the drive to some extent... ;) Good that you can keep the
