    Title: Whole Wheat Pizza Crust
    Categories: Breads, Ethnic, Genie
    Servings: 2

    1 pk Dry yeast 3/4 c Whole wheat flour
    1 c Warm water 2 ts Salt
    -(105 to 115 F) 4 ts Cornmeal (optional)
    2 1/2 c All-purpose flour

    Stir yeast into warm water and set aside for 5 to 10 minutes.
    Combine
    the flours and salt in a mixer bowl; add yeast mixture. Mix until dough
    begins to pull away from side of bowl. (Add a little more flour if dough
    sticks to side.) Divide dough in half. On a floured surface with
    floured
    rolling pin, roll each half into a 15-inch circle (dough should overlap
    pan
    by 1 inch all around). If dough resists rolling, let it rest a few
    minutes
    and try again. Dough can be refrigerated or frozen before rolling. Thaw
    thoroughly before attempting to roll out.
    Coat two nonstick 14-inch pizza pans with cooking spray and
    sprinkle
    with cornmeal (optional). Arrange each crust in a prepared pan and top as
    desired.

    Plus, it is rather fun to watch them making it. There is a device upon
    which they put the pizza dough. Then it spins around slowly, like a
    phonograph table. Pizza sauce squirts out through a tube that slowly
    traverses across the radius of the pizza. It is all engineered so that
    the sauce is spread quite evenly.

    Title: Zwiebelkuchen (Onion Pie)
    Categories: Vegetable, German, Ethnic
    Yield: 8 servings

    1 pk Yeast; Active Dry
    1 ts Sugar
    1 1/2 ts Salt
    3 c Unbleached Flour
    1 tb Shortening
    1 c Water; 120 to 130 Degrees F.
    6 Bacon; Slices, Cut Up
    2 Onions; Medium, Sliced
    1/4 ts Cumin
    1/2 ts Salt
    Pepper; As Desired
    1 Egg Yolk
    1 c Sour Cream

    Mix yeast, sugar, 1 t salt, and 1/2 cup flour. Blend in shortening
    and warm water. Beat for 2 minutes. Add enough flour to make a soft
    dough. Knead dough until smooth and elastic, about 5 minutes. Place
    dough in a lightly greased bowl. Cover and let dough rise in a warm
    place 1/2 hour. Pat dough into a lightly greased 12-inch pizza pan or
    onto a lightly greased baking sheet. Press up edges to make a slight
    rim. Fry bacon until crisp. Remove from grease and drain on
    absorbent paper. Add onions to bacon grease; cook slowly until
    tender but not brown. Sprinkle onion, bacon, cumin, 1/2 t salt and
    pepper over dough. Bake at 400 Degrees F. for 20 minutes. Blend egg
    yolk and sour cream. Pour over onions. Bake for 10 to 15 minutes
    longer or until golden brown and sour cream is set. Serve warm or at
    room temperature.
