    MMMMM----- Recipe via Meal-Master (tm) v8.05

    Title: BEEF STROGANOFF 06
    Categories: Meats, Main dish, _ethnic
    Yield: 6 Servings

    2 lb Beef round steak, cubed
    3 tb Soy sauce
    3 tb Ketchup
    1 ea Onion, large/sliced
    2 tb Flour
    1 pt Sour cream
    1 ts Paprika
    1 cn Mushrooms, drained
    1 x Salt/pepper

    Cook onion in butter until transparent. Remove from pan. Brown meat
    in same pan. Return onions to pan. Stir in 2 tablespoons flour. Add
    mushrooms, ketchup, paprika and sour cream. Salt and pepper to taste.
    Stir. Turn on low and cook until meat is tender. Serve over cooked
    rice or noodles. If beef mixture seems too thick, add a little milk
    to preferred consistency.

    Title: French Twist New England Boiled Dinner
    Categories: Pork, Stove top, Porkst, Pork1pot, 1pot
    Yield: 4 servings

    1 lb Head of green cabbage
    -pork
    4 md Potatoes, peeled
    2 Leeks, trimmed & well washed
    -tied
    1 Onion*
    2 ts Allspice
    1 Bay leaf
    1 Salt to taste
    1 lb Smoked shoulder or butt
    4 lg Carrots, trim & scrape
    4 Ribs celery,trimmed and
    2 Whole cloves
    1 ts Dried thyme
    6 Peppercorns
    4 Chicken legs and thighs

    *Peel onion but leave stem on, press cloves into onion.
    Remove and discard any tough outer leaves on the cabbage, quarter and
    remove the core.
    In large kettle, combine the pork butt, potatoes, cabbage, carrots,
    leeks, celery, onion, allspice, thyme, bay leaf, and peppercorns.
    Cover with water, add salt to taste. Cover, bring to a boil, reduce
    heat and simmer for 20 minutes. Add the chicken and simmer for 15
    minutes more.

    From the author: "In my recipe, smoked shoulder or butt of pork is
    combined with winter vegetables and chicken. The smoked pork is
    already cooked, which greatly reduces boiling time. The chicken legs
    and thighs go in last because they cook quickly. Serve guests a
    little of each ingredient along with Dijon-style mustard, grated
    horseradish and cornichons. A mixed green salad is all you need on
    the side."

    Title: Sour Cream Dressing a la Ron's Plaice
    Categories: Dressings, Salads
    Yield: 1 Servings

    Soured thick cream
    Salt & Pepper
    French Mustard
    Castor Sugar

    Stir cream until smooth. Season with salt & pepper.
    Add mustard and castor sugar. Stir well.

    Add a little milk if the dressing is too thick for
    your taste.

    Ron's notes: You can add finely chopped chives for a
    little color if you wish.

    I have black socks in several lengths - from the "quarter socks" that
    I wear when during short pants season (currently coming to an end) to
    the knee-high compression guys - with stops along the calf at various heights/lengths. Some are thin, almost sheer. Others are "normal" and
    still others are thick and fuzzy. And a couple sets of thermal socks
    plus a battery-powered heated set left over from my year-round motor
    sickle and snowmobile days.

    Title: Shemp's Waffles w/Cherry Sauce

    MMMMM------------------------CHERRY SAUCE-----------------------------
    1/4 c Sugar
    2 ts Cornstarch
    1/8 ts Cinnamon
    1/2 c Orange juice
    2 c Sweet cherries; pitted,
    - halved
    1 ts Grated orange peel
    Sweetened whipped cream

    MMMMM--------------------------WAFFLES-------------------------------
    2 c Flour
    2 tb Sugar
    1 1/2 ts Baking powder
    1/2 ts Salt
    2 c Milk
    1/2 c Melted butter
    4 lg Eggs separated

    For Cherry Sauce: Combine sugar, cornstarch and cinnamon;
    add orange juice, cherries and orange peel. Bring to boil
    over medium high heat; boil until thickened. Serve warm
    cherry sauce over waffles; top with sweetened whipped
    cream.

    For Waffles: Combine flour, sugar, baking powder & salt.
    Combine milk, melted butter and egg yolks. Add to dry
    ingredients; stir just to moisten. Fold in stiffly beaten
    egg whites. Bake in waffle iron according to maker's
    directions.

    Makes 3 (or more) waffles

    UDD Notes: These are the old-fashion waffles. NOT the
    puffy "Belgian" waffles. Cherry preserves will work
    just fine if you're not up for making the sauce. Or,
    like me, just bone lazy.

    I've seen some thin nylon type socks -- and the ones I have are
    definitely not like them. They are not as thick as some athletic socks,
    but thick enough to be comfortable.

    Title: Mason Jar's Tortilla Soup
    Categories: Soup, Mexican
    Yield: 4 Servings

    1 sm Green bell pepper, cored,
    Seeded, and cut into
    Chunks
    1 sm Medium yellow onion, cut
    Into chunks
    1/2 lb Celery, cut into 1-in
    Pieces
    1/2 lb Carrots, cut into 1-in
    Pieces
    1/3 c Cilantro leaves
    1 tb Garlic, minced
    2 ts Chili powder
    2 ts Cumin
    1 1/2 ts Cracked black pepper
    2 Sticks PLUS
    2 tb Butter, divided
    1/3 c Olive oil
    10 oz Corn tortillas
    3 qt Water
    4 oz Chicken-seasoned stock base
    1/3 c Flour
    1 1/2 lb Tomatoes, peeled and
    Coarsely chopped
    2 lb Skinless, boneless chicken
    Breasts, grilled and
    Diced into 1/4-in cubes
    Corn tortilla, cut into 8 x
    1 In and fried
    Cheddar cheese, grated (for
    Garnish)

    In a food processor, place the bell pepper, onion, celery, carrots,
    and cilantro and finely chop. Set aside the chopped vegetable in a
    large bowl.

    In a small bowl, combine the garlic, chili powder, cumin, and black
    pepper. Stir into the chopped vegetables.

    In a large pan over medium heat, melt 1 stick plus 2 tablespoons of
    the butter and the olive oil. Add vegetable niixture and saute,
    stirring often, until vegetables are transparent and sightly browned.

    In a food processor, finely chop the 10 ounces of tortillas. Add the
    chopped tortillas to vegetable mixture. Saute over medium heat until
    soft. Transfer mixture to a large pot over medium heat. Add the
    water and chicken base, mixing until chicken base is dissolved.

    In a large skillet over medium-high heat, melt remaining 1 stick
    butter and whisk in the flour. Cook for 2 to 3 minutes, while
    whisking, to make a roux. Add the roux to soup. Stir and let simmer
    20 minutes. Stir in the chopped tomatoes and then diced chicken.
    Cook until heated through.

    Ladle soup into bowls and sprinkle with the fried tortilla strips and
    grated cheese.

    Makes 1 gallon of soup.

    However, K-Mart (while it lasts), Kohls, etc. all have sox at decent

    I was being facetious. But I do prefer old-style (not Belgian "puffy")
    waffles. My waffle iron is round, chrome, and has a cloth "insulated"
    two prong electric cord and bakelite knobs.

    It belonged originally to my grandmother.

    1 1/3 c Whole wheat flour
    3/4 ts Salt
    2 ts Baking powder
    2 tb Sugar
    1 c Milk
    4 tb Melted shortening
    2 lg Eggs

    Beat egg yolks well; add milk and shortening. Combine
    salt, sugar, and flour. Add to first mixture. Beat
    until smooth. Fold in stiffly beaten egg whites. Sift
    baking powder lightly over the mixture and fold in
    quickly. Bake in hot waffle iron.

    Makes 6 servings.
