    1/2 c Coconut cream
    3/4 ts Almond extract

    There's all sorts of cocktails that contain those three
    ingredients too. It's a flavour combination that seems to be
    popular. And here's a non-beverage incorporating the same three
    flavours together.

    MMMMM----- Recipe via Meal-Master (tm) v8.06

    Title: Coconut Almond Granola
    Categories: Breakfast, Grains, Fruit, Nuts
    Yield: 2 Servings

    3 tb Firmly packed light brown
    -sugar
    3 tb Unsalted butter
    1/2 ts Cinnamon
    1/2 ts Vanilla
    1/2 ts Salt
    1 ts Freshly grated orange zest
    1/2 c Sweetened flaked coconut
    1/2 c Sliced almond
    1 c Old-fashioned rolled oats
    1/4 c Wheat germ

    In a small saucepan combine the brown sugar, the butter, the
    cinnamon, the vanilla, the salt, and the zest and cook the mixture
    over moderately low heat, stirring, until the brown sugar is
    dissolved. In a bowl stir together the coconut, the almonds, the
    oats, and the wheat germ, add the brown sugar mixture,and toss the
    mixture until it is combined well. Spread the granola in a
    jelly-roll pan, bake it in the middle of a preheated 350F. oven,
    stirring every 5 minutes, for 10 to 15 minutes, or until it is
    golden, and let it cool. The granola keeps in an airtight
    container for 1 week.

    Suggestion: Serve the granola as a topping for fruit salad.

    Makes about 2 cups.

    Yield: 4 servings

    1 lb Yellow onions
    1 t Sugar
    2 T Olive oil
    5 c Beef broth, strained
    1/4 t Black pepper
    4 x French bread slices
    6 oz Jarlsberg cheese

    Thinly slice Onions and Cheese. Cut bread into 1 inch slices and
    toast.

    In dutch oven, cook Onions and Sugar in hot Oil over medium heat
    for 15 to 20 minutes or until deep golden brown, stirring
    frequently to prevent burning. Slowly add broth and Pepper;
    bring to a boil. Reduce heat, cover, and cook slowly for
    20 minutes.

    Ladle into ovenproof container or individual ovenproof bowls.
    Place bread slices on top and add Cheese. Place under broiler
    3 to 4 inches from heat and cook 3 to 5 minutes until Cheese
    is hot and bubbly.

    MMMMM----- Recipe via Meal-Master (tm) v8.05

    Title: Green Tomatillo Sauce
    Categories: Sauce, Tex mex
    Yield: 4 Servings

    6 Tomatillos (depending on
    Size)
    1 sm Onion, cut into quarters
    1 Clove garlic
    Enough chicken broth (NOT
    Stock) to cover
    2 Serrano chiles, seeded and
    Diced
    1/4 c Cilantro
    Salt to taste

    Husk the tomatillos and wash them to remove the sticky sap that covers
    them. Place in a small saucepan with onion and garlic. Cover with
    chicken broth (again, do NOT use stock, it will be too heavy and
    spoil the taste of the finished sauce) to cover.

    Simmer over low heat until tomatillos are quite soft, and onions and
    garlic are cooked.

    Place cooked vegetable and the cooking liquid into the bowl of a food
    processor or blender. Add peppers and cilantro, and process until
    quite smooth.

    Return to the saucepan, and simmer until the mixture is reduced
    slightly (it should be thick enough to lightly coat a spoon). Salt
    to taste.

    This makes an excellent sauce for rellanos, but is equally good over
    an omlette, leftover pork roast, or as a topping for grilled chicken
    breasts. If you double the recipe, it also makes a killer sauce
    for green chile enchiladas.

    Source: My attempt to recreate the excellent rellano sauce served
    by the El Napolito restaurant in Cardiff-by-the-Sea, CA. Not quite
    it, but good, nontheless.

    I opened my secondary bank account at a local credit union three years
    ago. I still have not gone through the first pad of 25 cheques. Deposit
    slips - those are in short supply. I had to stop and get a supply of
    blanks this week. Same for my primary bank - deposit slips are the big
    use items.

    Regular household bills electric, gas, trash service, internet, Part D,
    etc. are all on "level pay" and deducted from one or the other of my
    checking accounts - except the internet and Part D. The utilities and
    trash have a "convenience fee" for using plastic.

    I put recurring bills that don't whack one extra for plastic on one or
    the other of my credit cards - all of which have some sort of "rewards" attached to their use.

    Thinking about it - taxes and licence plates are about all I write a
    cheque for any more. And I have found a way to pay my taxes by direct
    debit and avoid the "convenience fee".

    I get the feeling that if the internet ever blows up a lot of us will
    be in mega-dookey land.

    Title: St. Wenceslaus Kolaches *
    Categories: Pastry, Dairy, Snacks
    Yield: 14 servings

    2 lg Whole eggs
    6 Egg yolks
    1 c Butter
    1 c Lard
    1 1/2 c Sugar
    1/3 c Mashed potato granules
    2 1/2 tb Salt
    1/3 c Instant active dry yeast
    2 c Powdered milk

    MMMMM--------------------------FILLING-------------------------------
    Raspberry preserves
    Apricot jam
    Strawberry jam

    * Kolaches are a Czech recipe that are traditionally
    made with a yeast dough and fruit filling. - UDD

    Beat eggs, butter, lard and sugar. Add potatoes,
    dissolved in 1 1/2 cups of very hot water; beat again.

    Dissolve the powdered milk and salt in 6 1/2 cups hot
    water, and add to mixture. Put all together in bowl; mix
    with mixer with 16 cups flour and the yeast. Beat for 3
    minutes. Add 4 more cups flour and beat 6 more minutes.
    Put in a large, greased, stainless steel bowl; cover
    with plastic wrap. Let rise 1/2 hour.

    Punch down and let rise another 1/2 hour. Put onto
    breadboard and shape.

    Bake between 8 1/2 to 9 minutes at 400°F/205°C.

    When baked, brush with melted butter.

    Makes 12 dozen (big batch)

    There are lots like you... but I write many more than that a year...
    although I'll use my debit/ATM card to avoid using checks when I'm out,
    and I'll use the pay-by-phone to direct debit from the account for my
    three major credit card payments, most bills are paid by check from the account(s) as are most charitable donations... I don't like automatic
    debits from the accounts, and I like to have the bank book's record of
    anything medical or charitable... And I prefer not to run up the credit
    card accounts by auto charges, as the card that gives better rebates
    isn't one that I pay off in full each month... :)

    A fantastic easy to make
    -pickle
    4 c Granulate sugar
    2 c White vinegar
    2 T Coarse pickling salt
    1 t Turmeric
    1 t Celery seed
    1 t Mustard seed
    1 lg Red pepper, seeded, cut in
    -slices
    1 lg Green pepper, seeded, cut
    -in slices
    1 lg Spanish onion, cut in slices
    5 ea Cucumbers with peel, thinly
    -sliced

    Measure first 6 ingredients in 4 quart ice cream bucket. Stir. Add
    red pepper, green pepper and onion. Add more or less cucumber,
    depending on size, to fill bucket up to level of liquid. Let stand
    about 2 hours. Stir. It will shrink down a bit so you may be able to
    add a few more cucumber slices. Cover. Store in refrigerator for up
    to 6 months. Makes about 2-1/2 quarts.

    Title: Lentil Dahl
    Categories: Curry, Main dish, Vegetarian, Vegan
    Yield: 1 servings

    2 c Green or brown lentils
    1 Cinnamon stick, 3"
    1 Bay leaf
    3 md Garlic cloves, peeled, whole
    2 sl Ginger root, 1" thick
    1 ts Turmeric
    3/4 Lemon
    1/2 ts Salt
    1/8 ts Black pepper
    1/2 ts Cayenne
    3 tb Ghee
    1 pn Asafetida
    1/2 ts Whole cumin seeds

    Wash lentils & drain. Combine with 6 cups water, cinnamon stick, bay
    leaf, garlic cloves, ginger slices & turmeric. Bring to a boil, lower
    heat & simmer for 40 minutes, till lentils are tender & the water has
    been reduced significantly.

    Slice lemon thinly & add to the pot with salt, black pepper & cayenne.
    Simmer for a further 5 minutes.

    Just before serving, heat ghee till hot, add asafetida & cumin seeds &
    saute till the seeds begin to colour. Pour over top of dahl & serve
    over rice.

    Everything seems to be working OK. I was incommunicado from about the 1st of last month until the 24th(?). Traveling the first part, my fault the last part. But the QWK packets were stacking up at my ISP. I was watching via web mail.

    Things are mostly calm, computer wise. In Anchorage there was a power glitch so I know at least one is sitting there patiently waiting for someone to press the F1 key so it can boot. I'm waiting until folks up there have a chance to catch their breath before I start bugging them for a favor. Here things are fairly calm. I'm waiting on what will be my new computer in Anchorage. Order here, deliver here, most places want $'s to ship to Anchorage. Then it's load it up, and reload this one. Ship it back as luggage, big hardsided suitcases work well (it's what I brought this one down in) and they're dirt cheap in thrift stores.

    In Anchorage I was told I had a photo fall off of a coffee table onto the carpet, and 2 lamps fall off of the nightstands, one broken bulb.

    What was glossed over was a 5.7 about a week earlier that was down by Homer (there's a web site earthquake.alaska.edu/earthquakes, if anybody cares, showing all the seismic activity). My RV parked at the lake is halfway there.
    Last time they had a good shaker down that way I lost a TV, and had some minor damage to things. I'll see in the spring. Another time, back when the cat was
    around...we were sitting there, me reading and listening to music, the cat doing feline things...and all of a sudden the RV was bouncing one way and the building was bouncing another. Slamming into each other on the shared wall, normally about a 2" gap. The cat glared at me with an expression that said "Very funny! Now stop it!" No cracks in the drywall or anything else, so all was well.

    Title: Lentils with Tomato Sauce
    Categories: Vegetable, Side dish
    Yield: 4 Servings

    1/2 lb Lentils; dry; (about 2 cups)
    3 c Water
    Salt & pepper to taste
    1 sm Onion; peeled
    2 Whole cloves
    2 tb Butter
    3/4 c Leeks; finely chopped
    1 c Onion; finely chopped
    1 ts Garlic; minced
    1 1/2 c Tomato; crushed or chopped
    2 tb Butter

    Rinse lentils, and drain. Put them in a saucepan, add water and salt.
    Bring to a boil. Stick onion with cloves, add to pan. Cover and let
    simmer for 25 to 30 minutes, or until tender.

    Meanwhile, heat butter in a skillet, adding leeks, onions, and garlic.
    Cook, stirring, for about 5 minutes...don't let it brown! Add the
    tomatoes, salt, and pepper. Stir and bring to a boil. Cover, let
    simmer 10 minutes. When lentils are tender, drain them and add them
    to the tomato sauce. Bring to a boil (briefly) then add butter and
    stir until melted.

    Great with pork chops

    In Anchorage I was told I had a photo fall off of a coffee table onto
    the carpet, and 2 lamps fall off of the nightstands, one broken bulb.

    That's not too bad... it could have been much worse...

    What was glossed over was a 5.7 about a week earlier that was down by Homer (there's a web site earthquake.alaska.edu/earthquakes, if anybody cares, showing all the seismic activity). My RV parked at the lake is halfway there. Last time they had a good shaker down that way I lost a TV, and had some minor damage to things. I'll see in the spring.

    Hopefully not anything major... or even any little things either... :)
    If there were major damage there, is there anyone that would let you
    know....?

    Another time, back when the cat was around...we were sitting there, me reading and listening to music, the cat doing feline things...and all
    of a sudden the RV was bouncing one way and the building was bouncing another. Slamming into each other on the shared wall, normally about a
    2" gap. The cat glared at me with an expression that said "Very funny! Now stop it!" No cracks in the drywall or anything else, so all was
    well.

    You lucked out there... :) I'd've said to the cat, YOU are in charge of
    the weather, you need to do better than that... you stop it... (G)
    That's what we tell our cats when they complain to us about the
    weather... ;)
