    Together with the tongues, they make a super chowder or
    old-fashioned hash.

    intensive and therefore they're far more expensive than the fillets.

    And the quotas for Atlantic cod have been slashed again in an

    MMMMM----- Recipe via Meal-Master (tm) v8.06

    Title: Chicken, Pork and Fruit Stew Mexican Style
    Categories: Pork, Chicken, Potatoes, Stews, Chilies
    Yield: 10 Servings

    2 tb Oil
    2 lb Chicken; legs, thighs
    1 lb Pork shoulder; boneless
    1 md Onion; Chopped
    1 Bell pepper; Chopped
    1/4 c Almonds; Blanched
    8 oz Tomato sauce
    8 oz cn Pineapple rings in juice
    1/2 c Water
    2 ts Chili powder
    1/2 ts Salt
    1/2 ts Cinnamon
    2 Sweet potatoes; 1 inch pces
    2 Apples; Sliced
    2 Bananas; Sliced
    Parsley; fresh, chopped

    Cut all visible fat from pork; cut into 3/4-inch pieces. Drain
    pineapple and reserve syrup. Use packed in juice if preferred.
    Heat oil in dutch oven or heavy pan with lid. Cook chicken over
    medium heat until brown on all sides; about 15 minutes. Remove
    chicken; set aside. Cook pork in pan until brown; about 10
    minutes. Stir often. Remove; set aside. Cook and stir onions,
    green pepper and almonds until onion is tender. Place onion, green
    pepper, almonds and tomato sauce in blender. Blend until smooth
    consistency.

    Drain fat from pan. Mix tomato sauce mixture, reserved pineapple
    syrup, 1/2 cup water, chili powder, salt and cinnamon in pan. Add
    chicken, pork and sweet potatoes which have been cut into 1-inch
    pieces. Heat to boiling then reduce heat. Cover and simmer until
    sweet potatoes are tender; about 55-60 minutes. Add 1/4 cup water
    during cooking if necessary. Cut pineapple slices in half. Add
    pineapple and sliced apple to chicken mixture. Cover and simmer
    until apples are tender; about 10-12 minutes. Add bananas. Serve
    in soup bowls; garnish with chopped parsley if you wish.

    long gone. The guy carried things like pails of salt naval beef,
    hard tack (Purity biscuit), dried salt capelin, dulse and kelp, even
    canned seal meat (back when there was still a market for it). When-
    ever he had a shipment of cod tongues and cheeks (frozen) come in,
    they disappeared overnight.

    Title: Tongues and Cheeks Chowder
    Categories: Fish, Soups, Pork, Potatoes, Chilies
    Yield: 6 Servings

    2 lb Tongues and cheeks
    4 Potatoes
    1/2 c White wine
    4 Scallions
    4 tb Butter
    2 tb Salt pork; chopped
    Flour
    1 tb Fresh parsley
    1 c Light cream
    1 c Evaporated milk

    Boil potatoes and reserve the water. Poach the tongues and cheeks
    in 2 cups of the potato water to which the white wine has been
    added. Poach for two to three minutes. Save the water and fish in
    separate bowls.

    Saute scallions in butter and salt pork briefly to soften. Add
    enough flour to make a roux, then add potato/wine water to make
    veloute base. Add chopped potatoes, fish, salt and pepper to
    taste, and parsley.

    Just before serving, stir in light cream and evaporated milk. If
    you would like the chowder a bit thinner, thin with regular milk.

    1 stripe bass or cod, cleaned
    1 dozen small to medium clams, scrubbed 1 pound of shrimp, shelled and deveined
    1/2 pound cleaned calamari tubes, cut into rings 1 large can Italian peeled tomatoes 4 cloves garlic, chopped
    1 cup fresh parsley, chopped
    1 can of green olives
    1 teaspoon red pepper flakes
    1 bay leaf, broken in half
    1/2 teaspoon oregano
    1/2 jar of capers
    1/4 cup white wine

    Place the fish in a large, square pan. Add the clams. Layer the shrimp and calamari rings around the fish.
    Mix the tomatoes with all the spices, olives and capers. Add the wine to the tomatoes. Pour the tomatoes over the fish in the pan. Cover loosely with foil. Bake at 350F 25 minutes, or until the fish is fork tender.

    My first year in Yellowknife an Italian family and a Ukrainian family
    co-hosted an amazing Christmas Eve dinner. The Ukrainian tradition
    calls for 12 meatless dishes for Sviata Verchiria, many of which
    can be fish, much like Polish Wigilia. I remember a lot of parallel
    dishes side by side on the buffet table including Italian Crepe
    Cannelloni with Cheese & White Sauce and Ukrainian Nalysnyky (crepes
    filled with cottage cheese, covered in a heavy cream sauce and
    sprinkled with dill, then casseroled and baked).

    It was a potluck. I asked what I should bring and they said, "You're
    English Canadian so bring something English." I made vegetarian
    mince meat pies and bought a bottle of Scotch.

    Japan... Fu was open (he is every holiday, never takes a day off), so we
    always figure, why not... (G) We both ordered the all you can eat
    sushi... He had seaweed salad for his appetizer, I had the curry chicken
    on a stick for mine... miso soup and tossed salad with Fu's dressing
    came with... He had ice cream for dessert, I just asked for some of Fu's
    tomago (egg omelet)... In between, we had 8 pieces of nigiri and 3 rolls
    (8 pieces each) apiece... another true feast... :)

    We never dress up to go out to any of the restaurants we go to... Of

    sushi... He had seaweed salad for his appetizer, I had the curry chicken
    on a stick for mine... miso soup and tossed salad with Fu's dressing
    came with... He had ice cream for dessert, I just asked for some of Fu's
    tomago (egg omelet)... In between, we had 8 pieces of nigiri and 3 rolls
    (8 pieces each) apiece... another true feast... :)

    Sounds truly good :) :) I swore after knocking myself out (again)
    last week that this would be the last time I would do so and future
    Holiday meals would be enjoyed in a Restaurant! :) Now let's see if I
    can actually hold to that promise to myself when the time arrives...

    Problem is, for all the work it is, you actually enjoy the cooking and baking... admit it... ;) Just need to space out all the cooking and all
    over a longer time pre-holiday, I suppose... ;)

    Diner Rice Pudding

    I got this recipe for rice pudding from a friend of mine in New Jersey who ran a diner. It's the best rice pudding recipe I've ever used. The result is creamy and delicious.

    1 1/2 cups long grain rice, uncooked 2 quarts whole milk
    1 1/2 cups sugar (or less to taste) 1 Tablespoon vanilla extract
    pinch of salt
    Nutmeg

    Place all ingredients except for nutmeg in a heavy pot. Turn heat to high just
    long enough to bring mixture to a boil. Reduce heat to low immediately and cover tightly. Allow to simmer for about an hour or until the rice is soft, adding more milk if necessary.

    Remove from heat and cool. When at room temperature, sprinkle nutmeg all over the top, and refrigerate.

    Not that I think you'll eat this (apple recipe) but this is the apple cake/bread I mentioned above:

    ===Grandma's applebread===
    Preheat oven to 350F

    4 cups diced fresh apples
    1 1/2 cups sugar
    3/4 teaspoon cinnamon
    3/4 cup vegetable oil
    2 teaspoons vanilla extract
    2 eggs beaten
    3 cups unsifted flour
    2 teaspoons baking powder
    2 teaspoons baking soda
    2 teaspoons cinnamon
    1/2 teaspoon salt
    1 cup chopped pecans
    1 cup chopped raisins

    Grease 2-9x5" bread pans.

    Combine apples, sugar and the 3/4 teaspoon cinnamon and let stand for 30-35 minutes, or until the juices run from the apples. Combine oil, vanilla, eggs and add to the apple mixture.

    Combine the flour, baking powder, soda and 2 teaspoons cinnamon, salt and mix well into the apple mixture. Stir in the raisins and chopped pecans. Pour into
    the prepared bread pans. Bake for 45 minutes or until a cake tester comes out clean.

    ===Southern Fried Apples===

    2 large granny smith apples
    4 tablespoons real butter, chopped
    Juice of ½ lemon
    2 tablespoons white sugar
    2 tablespoons brown sugar
    1 teaspoon cinnamon

    Peel, core and cut apples into even slices.
    Melt butter in skillet over medium heat.
    Add apples and drizzle them with lemon juice.
    Let apples simmer until most of butter is absorbed and apples are tender. (do not overcook. Apples should be firm to the touch, yet tender with a little give to the bite.)
    Stir together sugars and sprinkle them over apples.
    Toss to combine.
    Lower heat if needed.
    Let apples cook until sugars are completely dissolved and syrupy.
    Remove from heat and sprinkle apples with cinnamon.
    Toss to distribute cinnamon.
    Plate apples and serve piping hot!

    Understand! Well, we've survived the 'holidays' and now I can wait until Easter for the next 'big meal' <grin>. Yesterday was my son's birthday though... I had Ron grab some good cakes at Wegmans for that.. I've had them before and they are generally so good, you wouldn't think they were 'supermarket cakes' :) For dinner, we had barbequed spare ribs - he was happy (no chicken Lol). He is just like my Uncle Ralph was as far as chicken goes.. he inspects it for 'fat' and generally won't eat any bird at all :) Tastes, at
    least in my family, seem to be genetic haha

    I have always preferred raw clams :) :) I think at one of picnics here in Ithaca, we went to Maxie's Supper Club & Oyster Bar - I remember that was a great place to get raw clams :)

    I understand! My allergies are constantly changing, what a PITA. Not so much with foods, but with meds. I tried to quit smoking with Chantix, and the first
    time I tried, there were no problems with the drug. I started smoking again though a few weeks later (dumb) and the second time I tried Chantix I had a bad
    alleric reaction (one side of my face turned RED and puffed up noticibly)... so
    now I'm at least TRYING to cut down on the cigs... damn.

    Anyway, allergies are not something one should mess with; that I know for a fact :(

    Apparently you got sensitised to the drug the first time, and so
    developed the allergy to it.... too bad it couldn't help you the second time.... A friend of mine here got so mad at the cigarette companies

    turkey, after years of trying every so often to quit.... She'd used
    vaping the last few times, and did that for a while this last time... I
    think she's not even doing that any more.... and she didn't pick up the
    cigs again.... she's still too mad at the companies to want to support
    them any more with her habit...

    Anyway, allergies are not something one should mess with; that I know
    for a fact :(

    That's for sure.... I have issues with almost every drug I've tried...
    it's rare when something will actually work, and not give any issues...
    usually it doesn't work (or barely works) and does give me a lot of

    It's been busy here, too... and I don't even do much if anything for the
    holiday any more... :)

    Understand! Well, we've survived the 'holidays' and now I can wait
    until Easter for the next 'big meal' <grin>.

    cook every night "anyway" <g>.

    I just had a bad feeling about her moving in with someone who was not really a family member.. it all seemed innocent enough, until a bit later I got a call her bank saying a huge amount of funds had been removed from Ron's aunt's account. You can probably guess where those funds ended up :(

    Yesterday was my son's birthday though... I had Ron grab some good
    cakes at Wegmans for that.. I've had them before and they are
    generally so good, you wouldn't think they were 'supermarket cakes' :)

    For sure... They do make an effort to put quality into their bakery
    products (like everything else)... even their sheet cakes are pretty
    good.... The fancier cakes you might as well have gone to a "good"
    bakery for.... :)

    Yes, that's what I've found as well :) Ok, it's not the same as say going to a
    good Italian bakery like Sopranos (in Waverly NY https://sopranosmarket.com/) but for american fare, or a good birthday cake, it's great. :)

    My daughter also had problems with apples in general. Her reactions
    were interesting in that if the apples were cooked, it didn't bother
    her so badly. I always thought that was weird. :( I think she just
    avoids them now, period.

    alone or in stuff, and in fairly small quantities still... I'm not as
    totally allergic as I might be, but it's bad enough... :)

    Chantix, and the first time I tried, there were no problems with the

    when they admitted that they had put things into the cigs to make
    smokers more addicted to them, that she finally just stopped cold
    turkey, after years of trying every so often to quit.... She'd used
    vaping the last few times, and did that for a while this last time... I
    think she's not even doing that any more.... and she didn't pick up the
    cigs again.... she's still too mad at the companies to want to support
    them any more with her habit...

    It's funny how different people react to things like vaping. When I tried using it quit, it made me smoke more.. go figure...

    Anyway, allergies are not something one should mess with; that I know
    for a fact :(

    it's rare when something will actually work, and not give any issues... usually it doesn't work (or barely works) and does give me a lot of issues.... I'm very leery of any new prescription, as you might
    guess.... ;)

    If it's an antibiotic, I know these days I'll probably have a problem with it..
    my doc is good as watching which ones he gives me so that's good.. I was totally surprised though by the allergy to Chantix (sigh).

    Here's something I made recently, I forget where I found the recipe but it's very good :)

    ===Chicken with Polenta ===
    4 bone-in chicken thigh and leg or chicken breasts
    Salt and freshly ground black pepper
    2 teaspoons poultry seasoning
    2 teaspoons grill seasoning
    3 tablespoons extra-virgin olive oil
    4 thick cut slices pancetta or bacon, chopped
    1 medium red onion, chopped
    2 cloves garlic, grated or finely chopped
    1 to 2 sprigs fresh rosemary, finely chopped
    1/4 cup balsamic vinegar
    3 tablespoons brown sugar
    1 tablespoon Worcestershire sauce
    1 cup tomato sauce
    2 1/2 cups chicken stock
    1 1/2 cups milk
    1 cup quick cooking polenta (corn meal, geez all cornmeal is "quick
    cooking <grin>)
    2 tablespoons butter
    1/2 cup grated Parmiginao-Reggiano
    Torn fresh basil leaves

    Directions

    Preheat oven to 400 degrees F.

    Season the chicken liberally with salt and pepper, poultry seasoning, and grill
    seasoning. Heat 2 tablespoons olive oil in a medium skillet and brown the chicken a few minutes on each side to put some of it's flavor and drippings into the pan then transfer to oven and roast 15 minutes more or until juices run clear. Meanwhile, add 1 more tablespoon olive oil to the pan and cook pancetta or bacon, if using, until crisp. Add onions, garlic and rosemary, cook
    5 minutes then add the vinegar, sugar, Worcestershire, tomato sauce and 1/2 cup
    chicken stock, reduce heat to low and let sauce simmer 5 minutes more.

    Bring remaining 1 1/2 cups stock and milk to a boil, whisk in polenta and season with salt and pepper. Whisk polenta 2 to 3 minutes until it thickens, stir in butter and cheese, remove from heat.

    Remove chicken from oven and turn in barbecue sauce. Fill shallow bowls with polenta Top with chicken, spoon extra sauce over chicken and garnish with some torn basil leaves.

    That's a shame.... one would have hoped for better from a trusted friend/employee.... Were you able to recoup any of that...?

    Well, I do still have some ravioli in the freezer from Christmas.. so maybe Easter will be not crazy.. that and some Easter Egg Bread for breakfast should be good :)

    ===Easter Egg Bread===
    This is great breakfast treat on Easter morning. The dyed raw eggs bake in the
    oven so that sections can be broken off with a chunk of bread and egg combined.

    9 raw eggs
    Easter Egg coloring kit
    4 cups all-purpose flour
    1/2 cup white sugar
    1 teaspoon salt
    1 package dry active yeast
    2/3 cup milk
    2 tablespoons butter
    2 eggs
    2 tablespoons butter
    1 tablespoon grated lemon peel
    1 egg mixed with 1 tablespoon of water

    Dye the 9 raw eggs and set aside. Don't cook them. Mix sugar, salt, and flour
    in a bowl. In a small pot, scald the milk (heat to almost boiling, 125 degrees) and then add the butter. When at room temperature, add the yeast. Let
    the yeast dissolve. Add the liquid ingredients to the flour mixture and beat 2
    minutes. Beat in the 2 eggs and grated lemon peel. Knead the dough until smooth and soft. Place the dough in a clean bowl and pour a little oil over it. Turn the ball of dough to coat. Cover with a dish towel and let it rise in warm place until doubled, about 1 1/2 hours. Punch down the dough and knead
    for moment to redistribute the yeast. Let the dough rest for 5 minutes. Cut the dough in three pieces and form each into a long rope, 25 inches long. Place the ropes on an oiled cookie sheet, and braid the ropes. Join the ends to form a large circle and use your fingers to pinch the dough to seal it. Place the dyed raw eggs in the braided loaf, using sections of braid to hold each raw egg securely. If the egg isn't in place securely, it will roll off as
    the bread bakes. Brush the dough with the egg mixed with water and let rise for about an hour. Bake at 350F for 25-30 minutes or until the bread sounds hollow when you tap on it and the loaf is golden brown.

    Not a cent, it's really irritating to her - as she knows exactly what happened.
    Even though she's quite old, she is still very very aware of all that goes on which is great. Sad though in this case :( The police in Ellenville, where this happened keep saying they are working on it, but geez, if we don't call them we never hear a word about the case. And there hasn't been any progress at all :( I would bet the whole thing showing no compensation is due to relatives up there (you know, in the police force or something :().

    That is also one of good things about my 2 kids.. neither one ever started. So much better for them. I think my daughter did try it maybe once (a few cigs) and quickly tossed that idea, thank goodness. Ron did smoke when we first met,

    Yes, especially when you know there are a number of varied allegies in the family... on both sides :( I remember one of Mom's sisters telling me that her
    doctor also had real problems finding any antibiotics that did not cause her problems :(

    Agreed... They start with good ingredients, and they do put them
    together nicely... They've been having the digital coupons for the
    oven-ready packaged meals, which encourages me to get them from time to time.... And the prepackaged ready to eat ones are pretty nice, even if
    I wouldn't always be putting quite those same things together... :)

    case. And there hasn't been any progress at all :( I would bet the

    haha.. true.. though when you want a cig bad enough, people needling you might just get on your nerves making things worse <vbg>. I just have to do it the way I did it the first time (many years ago)... just set aside X number of cigs

    2 slices of bread, torn up
    1/2 cup finely chopped mushrooms
    1 chopped onion
    1 stalk celery chopped
    2 Tablespoons parsley
    1/4 cup flour
    1 cup tomato juice or 1/2 Cup ketchup dissolved with 1/2 cup water 1/2 teaspoon
    salt or more to taste
    1/2 teaspoon pepper or more to taste 2 eggs, lightly beaten
    2 Tablespoons dry breadcrumbs for the pan

    Put the lentils and stock in a saucepan. Bring to a boil. Cover, reduce heat
    and simmer for 15 - 20 minutes or until all the liquid is absorbed and the lentils are soft. Remove the bay leaf.

    Heat the oven to 375F. Grease a loaf pan with olive oil, and sprinkle with 2 Tablespoons dry bread crumbs.

    Stir the mushrooms, onion, torn bread, celery, parsley, flour, salt and pepper
    into the lentils. Add the Tomato juice and eggs and mix all well.

    Spoon the mixture into the loaf pan and smooth the top. Bake for 1 hour or until golden brown. Allow to cool for 5 minutes, then loosen around the edge with a knife and place the loaf on a serving plate. Garnish with lemon slices and pieces of parsley. I like to cover the top with ketchup.

    Never tried that one... fortunately most antibiotics do work for me...

    Yeah, it is funny.. the norm would be a few cups of coffee... but that doesn't seem to work much these days... I guess it's just a build up of a tolerance... darnit :)

    It is so good.. every time I open the cabinet where I keep the red lentils I think about making lentil loaf.. one of these days I will <g> Though lately I've been wrapped up in making cheese cakes since Ron's aunt loves them :) :) When I have ricotta cheese in the fridge:
    ===Cheesecake===
    Oven 400F for 15 minutes, then reduce the heat to 350 for 45 min. more

    3 pounds whole-milk ricotta
    1 cup sugar
    4 large eggs, separated
    Finely grated zest of 1 large lemon 1 teaspoon pure vanilla extract
    1 tablespoon Strega liqueur (Cointreau or Triple Sec may be substituted)

    Position a rack in the center of the oven. Preheat to 400F. Butter a 9-inch spring form pan and place on a baking sheet.

    In a stand mixer fit with the paddle, beat the cheese, sugar, egg yolks, lemon zest, vanilla and liqueur on medium until very smooth, about 4 minutes. Transfer the mixture to another mixing bowl and wipe out the mixer bowl. Whip the eggwhites, then fold them into the cheese mixture. Pour the cheese mixture into the pan and bake.
