    You'd be surprised. There's a delicate balance
    in the ecology of the echo, sort of like Conway's
    game of life. You play an integral role in this.
    But as it turns out there was some sort of short
    blockage, and I have been intermittent (not that
    I'd know how to fix anything), so traffic was in
    fact down by a bit.
    Plus, Marc Lewis did some tinkering with his board and forgot to get the
    feed checked for here, for a few days. Steve e-mailed him, asking about
    it; that got the flow going again. I thought I'd uploaded my replies

    No, she does a lot for Mom and Dad so we don't fuss. She's a BSRN so
    keeps us updated on medical issues they're having--hopefully no
    emergency trips down to FL like we made last March when Dad had the
    heart attack.

    Even if there's no quid pro quo, giving a
    bunch of slack to those who are important
    to you is important to you.

    nutmegs, but I agree that fresh grated whole

    decided to flood the echo with 40 or 50 recipes per day, many of which
    were snagged off of the internet and had no attention to content, format
    or readability. After a round or two with those folks, I decided it was necessary to make it a real rule in order to maintain some sense of
    balance in the messages in the echo.

    In the years since, the problems that caused that rule to be have gone
    away. It would be up to our current moderator as to whether or not to
    drop the rule back down to a suggestion, or to elimnate it entirely, or
    to just ignore the occasional lapses as he is doing.

    Yield: 16 Servings

    4 lg Slices bread
    1 ts Butter
    3/4 c Red onion; finely chopped
    3/4 c Mushrooms; finally chopped
    1/4 lb Roast beef; cut in small
    -cubes
    1/4 c Beef broth
    2 oz Light cream cheese
    1/4 x Chopped lg green bell pepper
    -salt and pepper to taste

    Preheat oven to 350 f.. Remove bread crusts and flatten slices
    with palm of hand. Cut each slice into quarters. Press bread
    quarters into an ungreased, small muffin tins. Four corners of the
    bread will stand up. Bake for 7 to 10 minutes.
    Saute red onion and mushrooms in butter for 5 to 7 minutes. Add
    roast beef and cook an additional 2 minutes over medium-high heat.
    Add beef broth along with cream cheese; stir until creamy.
    Spoon filling into toasted bread cups. Garnish with green pepper.
    Makes 16 servings.

    1 tb Dry sherry
    Carrots, finely chopped

    In a bowl, stir the eggs with the dry sherry. In a mixing bowl,
    combine all the filling ingredients, include only the white parts of
    the chopped scallions (save the green parts for garnish) and stir to
    blend well. In a 8-inch skillet, heat the oil lightly. Pour about a
    quarter of the egg mixture to cover the bottom of the skillet. Heat
    until the egg pancake has barely set, then transfer to a plate. Make
    3 more pancakes. Divide the filling into 4 portions and put a
    portions on each pancake. Moisten your fingers with cold water and
    spread the filling mixture evenly over the surface of the pancake,
    then roll up tightly, as you would a jelly roll. Seal with a little
    leftover egg from the egg-beating bowl. Place the rolls on a flat
    plate that will fit your steamer, and then steam them over an inch of
    simmering water for 15 minutes. In a bowl, mix together the sauce
    ingredients. To serve, cut the rolls into slices, cutting on the
    slant. Drizzle the sauce over them and top with the scallion greens
    and the carrots. Makes 6 to 8 appetizer servings.

    I find that 20 is about as many as I can reasonably accomplish, when I'm

    I've not done that, that I'm aware of. Generally I stay off the computer
    for a few days to let the stuff clear my system. I will be on some pain
    killers but hopefully lucid enough after the first few days to

    op work up done. He's thinking I may hike the Grand Canyon when the knee

    No, usually there's a lot of "junk" food. One lady does usually make a cranberry coffee cake but other than that and the cheesecake, usually
    nothing special. One lady made cheese/sausage balls this time; they were
    quite good. We brought in a box of assorted (small) cookies that were
    popular with coffee during the day, brought home about a quarter of the
    box but it's now close to gone. (G) I usually concentrate on my sewing
    but do make sure to get some cheese cake at each retreat, other munchies
    are less of a priority.

    And of course if it's someone you care about,

    As of now, this is the main conference I'm active in. I do get net mail
    and, pointing off of Marc, do carry his area that he uses to send
    notices to the points. Otherwise, nothing else; I dropped Home Cooking
    and Writing a while ago. The latter had died a long time ago, just never
    took it off my listing.

    Third week reaction won't be quite that as the knee only started
    (re)bothering me last summer. I had quite a few years of being able to
    ski, run after kids, hike, ride bikes, etc before it started giving me problems. From the first twinges of pain last June to my surgery date,
    it's 7 months--some of the delay was caused by our previous summer committments, some by the need for insurance approval, etc. But, still,
    I'll be glad when it's done.

    time it did not hit the COOKING echo.

    We can usually get to where we need to go, even if Southwest does give "interesting" routing at times. One time, to get to LVNV, we flew from Raleigh to Miami, then a different flight out west.

    We have learned to like Southwest because it gives us direct flights to
    most places we want to go. Perhaps that is because BWI is one of their
    hubs.

    1 lb Minced cooked Pork
    -OR- Chicken or Beef
    1/2 c Minced celery
    1/4 c Minced onion
    2 tb Dried Oriental mushrooms
    -(soaked, minced)
    1 ds White pepper
    1 tb Light soy sauce
    1/2 tb Curry powder (or more)
    3/4 lb Won ton wrappers
    Oil; for deep frying

    Combine pork, celery, onion, mushrooms, white pepper, soy sauce and
    curry powder and mix well. Place 1 teaspoon filling just off center
    of each won ton wrapper. Fold wrapper over filling, forming
    rectangle. Pleat open edges and press to seal. Fry in deep oil heated
    to 375F until golden brown.

    The Cooking echo is the only one that would be (and has been) affected
    for me. I dropped a number of either dead or not interested in echos a
    while back; now I only have 45 Points (Marc Lewis), Cooking, and

    Probably so; RDU is not a hub for them. But, it's convenient for us so
    we use it. We've been on some Southwest flights when they pass the

    the flight attendants only give out one bag of whatever is requested.
    Must be that the plane is loaded with a certain amount of snacks, extras
    to be discarded before the next flight. If there aren't too many
    passengers, the flight attendants are probably free to offer more
    snacks. It's usually peanuts, pretzels, cookies (vanilla Oreo type) and
    plane crackers (similar to animal crackers but in shape of an airplane).
    My choice is usually peanuts or pretzels.

    3/4 lb Won ton wrappers
    Oil; for deep frying

    Interesting, don't know if I would have given it a name like that but
    they do look like a good appi-teaser type snack.

    I noticed that.... STATS in particular got quite the dump... a few
    others had smaller amounts dumped in them... WX_TALK, for one, and at
    least one other that I d/l and read only from one of the bbses....
