    I guess this is someone's attempt at making a recipe that imitates
    oyster rockefellow, but acceptable as a neutral appetizer in a kosher menu. TTTT, I don't think they hit the mark of something good.

    the palate was.... ;)

    I have always looked with suspicion on recipes that attempted to
    pretend something that they were not. I'm not speaking of copy-cat
    recipes, some of which are decent. But things such as that recipe that
    is attempting to make an imitation of something not acceptable to a
    group or class of people, and in doing so end up with something that is
    neither a good imitation nor a good dish.

    MMMMM----- Recipe via Meal-Master (tm) v8.05

    Title: Tiropetes (Cheese Puffs)
    Categories: Appetizers, Greek, Cheese
    Yield: 150 Servings

    1 lb Phyllo pastry
    1 lb Feta cheese
    1 lb Cottage or ricotta cheese
    5 Eggs
    1/2 c Parsley, finely chopped
    Butter (1/2-1 lb, as needed)

    Crumble feta cheese, add cottage cheese and mix well. Beat eggs well
    and add cheese mixture. Stir in parsley.

    Melt butter over low heat and keep warm throughout the following
    procedure.

    Cut phyllo into strips (approx. 4x10 inches) and set aside all but
    about 1/5. Cover the phyllo you are not using with plastic or wax
    paper and then a damp cloth to prevent it from drying out. Take top
    sheet from working stack, set on work surface and brush well with
    melted butter. Fold each side in lengthwise to meet in the center and
    brush with butter again. Place 1 tsp of the cheese mixture in the
    bottom right corner of the strip and fold over into a triangle. With
    each fold, be sure that the bottom edge is parallel with the side
    edge as you progress. Brush finished puff lightly with butter and
    place in a baking sheet with sides. Repeat until all cheese and
    phyllo are used. Bake puffs in a 400 deg F oven for about 15-20
    minutes, until light brown. Serve warm.

    Yup, my inclination is to simply avoid such.... I'd rather the real
    thing or probably not at all...
