    Hi everyone,

    My parents just bought one of the brand-name Instant Pot electric
    pressure cookers. It's an amazing little device. Very handy and it can
    do miracles with food. Do any of you have something like this? I'm
    just looking for more experience with using something like that.

    MMMMM----- Recipe via Meal-Master (tm) v8.06

    Title: Steamed Fish with Ginger and Onions
    Categories: Main dish, Fish
    Yield: 4 Servings

    1 1/2 lb Whole red snapper, cleaned
    6 ea Green onions, sliced
    1 x -----------sauce------------
    1 t Sesame oil
    2 T Slivered fresh ginger
    1/4 c Sherry, mirin or water
    2 T Soy sauce
    1 T Vegetable oil

    Rinse fish and pierce in several placed with a skewer or sharp knife.
    Place in a shallow microwaveable dish (if using 2 fish, arrange about
    1 inch apart with thicker sides towards outer edges of dish). Put
    half the ginger and green onions inside fish. Pour sherry over and
    cover with vented plastic wrap. Combine sauce ingredients in small
    microwaveable dish or measure. Set aside. Microwave fish at high
    for 6 to 8 minutes per lb or until fish flakes easily with a fork and
    is tender. Rotate dish if necessary during cooking.

    These things are trying to replace a bunch of different appliances:
    pressure cookers, slow cookers, rice cookers. All of which I own and
    which do a great job at what they are designed for. I also have limited
    kitchen counter space and storage. So it's $50 or more that I can spend
    on something I actually need.

    According to America's Test Kitchen on their comparo testing "We found
    that everything we tested was really good at pressure cooking, but the Instant Pot isn't quite as good at slow cooking than other models."

    Of course ATK is pretty anal about trivialities. I've decided to give
    the Instant Pot craze a miss.

    That being said - ATK does have decent recipes and they have published
    a cookbook "Multicooker Perfection: Cook It Fast or Cook It Slow-You
    Decide by America's Test Kitchen" available from Amazon.

    Title: Instant Pot Corned Beef
    Categories: Five, Beef, Vegetables
    Yield: 4 servings

    4 lb Corned Beef; w/seasonings
    1/2 c Butter
    1 3/4 c Water
    Salt & pepper
    Cooked Cabbage *

    Place your corned beef in a 6 quart electric pressure
    cooker with all juices or seasonings that come in the
    package.

    Add butter and water.

    Seal the lid and set your pressure cooker to high
    pressure for 90 minutes with the warming feature turned
    off.

    After your pressure cooker reaches pressure and cooks
    for 90 minutes, let it release naturally for 15 minutes
    before flipping to quick release.

    Taste to see if you need to add salt and pepper, if
    desired.

    Serve over a bed of cooked cabbage.

    Don't forget the carrots and parsley potatoes. - UDD

    very nicely cooking meat like chicken. Both my stepfather and I are,

    Title: Bean and Pasta Soup
    Categories: Soups, Pasta, Vegetables, Cheese
    Yield: 4 Servings

    2 pk Low-Sodium Instant Vegetable
    -Broth And Seasoning Mix
    Dissolved IN
    1 1/2 c Hot Water
    1 c Low-Sodium Canned Stewed
    -Tomatoes
    4 1/2 oz Uncooked Small Shell
    -Macaroni
    14 oz Rinsed, Drained, Canned Red
    -Kidney Beans
    1 c Thawed Frozen Spinach,
    -Chopped
    1/2 ts Oregano Leaves
    1/2 ts Basil Leaves
    3/4 oz Grated Parmesan Cheese

    Yield: 4 Servings Of 3/4 Cup Each

    In a 2 1/2-quart saucepan, combine the dissolved broth mix and
    tomatoes; cook over medium heat until the mixture comes to a boil.
    Add the macaroni and cook for 7 minutes. Add the beans, spinach,
    oregano and basil and stir to combine; cook until the macaroni is
    tender, 5 to 7 minutes. (If the soup is too thick, add a small amount
    of water.)

    Divide the soup into 4 soup bowls and sprinkle each portion with 1/4
    of the Parmesan Cheese.

    Each serving provides: 2 Proteins; 1 Vegetable, 1 1/2 Breads, 5
    Optional Calories

    Per Serving: 350 Milligrams Sodium; 5 Milligrams Cholesterol

    They are quite versatile. Look for a book called, "The Great Big
    Pressure Cooker Book: 500 Easy Recipes for Every Machine, Both Stovetop
    and Electric" by Bruce Weinstein & Mark Scarbrough. It is available both
    in soft cover and in electronic Kindle formats. I've used it for
    multiple things like cheesecake, chicken cacciatore (turkey cacciatore
    in the book but I substituted chicken). It is also great for cooking
    rice (brown as well as white). All in all, it is a very versatile
    device.

    Most recently we used a Beef Biryani seasoning mix to make Beef Biryani. Instead of stovetop, we cooked it all in the pressure cooker (not brand
    name Instant Pot). It turned out excellent.

    I used to was in that situation. Missed an echo picnic because of it one
    year. At which point I said enough is enough and went to I. Yankem the
    dentist and did the obvious. The china clippers have alleviated most of
    the snaggle-tooth issues I was having. And introduced their own set of "gotchas" .... like getting a black/raspberry seed or popcorn hull under
    a plate. OWTCH! And eating apples or corn-on-the-cob is a special thing. Teaches you that Fix-O-Dent is your friend. Bv)=

    have not watched TV for over 15 years so I haven't kept up on PBS or

    Title: Homemade Pancake Mix
    Categories: Five, Breads
    Yield: 36 pancakes

    6 c (30 oz) A-P flour
    3/4 c (5 1/2 oz) sugar
    1/4 c Baking powder
    1 1/2 ts Baking soda
    1 tb Salt

    EQUIPMENT: A large bowl, Whisk, Airtight container

    FOR THE PANCAKE MIX: In large bowl, whisk flour, sugar,
    baking powder, baking soda, and salt until well
    combined. Transfer pancake mix to airtight container.
    (Pancake mix can be stored at room temperature for up
    to 3 months.)

    Title: Pancakes From Mix
    Categories: Five, Dairy, Breads
    Yield: 6 Pancakes

    3/4 c Milk
    1 lg Egg
    2 tb Oil
    1/4 ts Vanilla extract (opt)
    1 c Pancake mix

    EQUIPMENT: Rubber spatula, 12" nonstick skillet, 1/4
    cup dry measuring cup, Spatula (pancake flipper), Plate

    TO MAKE 1 BATCH OF 6 PANCAKES: In medium bowl, whisk
    milk, egg, oil, and vanilla (if using) until well
    combined. Add 1 cup pancake mix and stir gently with
    rubber spatula until just combined (batter should look
    lumpy). Let batter sit for 10 minutes before cooking.

    Spray 12" nonstick skillet with cooking spray. Heat
    over medium heat until hot, about 1 minute.

    Use 1/2 cup dry measuring cup to scoop 1/4 cup batter
    into skillet. Repeat 2 more times, leaving space
    between mounds of batter (you want 3 pancakes to cook
    up separate from one another).

    Make sure to leave enough room to fit all 3 pancakes
    in the skillet.

    Cook pancakes until bubbles on surface begin to pop, 2
    to 3 minutes.

    Pancakes cook quickly, so don't take your eyes off of
    the skillet!

    Use spatula to flip pancakes and cook until golden
    brown, 1 to 2 minutes. Transfer pancakes to plate.
    Repeat with remaining batter. Turn off heat. Serve.

    PRO TIP: Make sure you slide the spatula all the way
    underneath the pancake before you flip.

    If you have an electric griddle it's perfect for this
    recipe -- just set the griddle to 350°F/175°C. You
    should be able to fit 6 pancakes in one batch. The
    recipe can be doubled if you want to feed a crowd.

    To keep bigger batches of pancakes warm set your oven
    to 200°F/93°C. As you finish a batch, place them on a
    cooling rack set in a rimmed baking sheet and keep
    them in the oven while you make the rest of the cakes.

    Right now, with my being suspended in thin air with the aftermath of my accident, I'm not sure if my private insurance is still good or not. I'll have to check. My parents' dentist will actually finance major work and I'm looking at $5K+ for all of the work I need done. Evidently my lower jaw has more bumps and potholes in it than a East Tennessee backroad so I have to have my jaw scraped and smoothed out (lower). We'll see but I really miss eating without pain.

    Christopher Kimball. He was the brains and the creativity behind ATK, Cook's Country, and "Cook's Illustrated" the magazine. Evidently corporate greed got the better of the company he founded and he was booted. ATK is a shadow of what it once was. It has good information but the delivery is as dry and bland as desert sand.

    Chris now has his own cooking company called Milk Street (from the road the office is on in Bahstan). More exotic offerings but still a profitable venture. A little too exotic most of the time for my tastes but fascinating stuff they make there.

    I don't necessarily watch TV but am more online these days with YouTube and Amazon Prime. I get the news over the radio (I listen to that a lot) or online. At 11 PM Eastern, I am at www.wjhl.com watching the local news. No room for a TV in the old motorhome but my 14" laptop does just fine.

    I get their emails w/recipes. Many of which are useful to me. For
    instance this beats the snot out of Aunt Jemima ...

    I have several sites that sends me recipes, Betty Crocker being one that comes to mind immediately.

    I'd say anything homemade would beat store=bought.

    My mom made bone stock last night with the Instant Pot. 10 cups of water generated 12 cups of broth. Tomorrow, for Sunday dinner, there will be homemade chicken soup. Evidently the IP is working very well for her.
