proper absinthe isn't sweet;
Perhaps the author has never tasted real absinthe and was thinking
of other more common anise flavored liqueurs like Pernod, Anisette
and Sambuca.
Likely pastis, which is sort of absinthelike
but can be quite sweet.
I have never tasted absinthe myself and I have not searched it out
since it became legal again, as I'm not overly fond of anise tasting
liquors and liqueurs in general but I am certainly aware of its
history and its taste profile.
I grew up with faux versions, most of which
had a fair amount of sugar - Absente, Abisante,
and so on. Absente is now made with the real
wormwood so might qualify as true absinthe,
as its label claims. Eventually, courtesy
of members of my club including Nicholas and
Lee (both referenced here in numerous posts), I've
had both pre-prohibition and post-legalization
versions of true absinthe; they are not that
thrilling, though they do do weird things to
my mouth (not to my head - tequila does that).
Kind of interesting in stews, though.
Biter Cocktail
1 1/2 oz gin
1/4 oz Yellow Chartreuse
1/4 oz pastis
3/4 oz fresh lemon juice
Whence the name?

1/2 oz Lemon Hart 151
1/2 oz green Chartreuse
1/4 oz Bols blue curacao
1 oz fresh lime juice
1/2 oz orange juice
1/2 oz orgeat
Combine ingredients with cracked or small ice
and shake to combine. Serve in appropriate
Tiki vessel and garnish with dry ice and
lavish produce.
