    Title: Apple-Cider Doughnuts with Maple Glaze
    Categories: Doughnuts
    Yield: 12 Servings

    3 tb White sugar for preparing
    -Pans
    2 c All-purpose white flour
    1 1/2 ts Baking powder
    1 1/2 ts Baking soda
    1/2 ts Salt
    2 ts Ground cinnamon
    1 lg Egg; lightly beaten
    2/3 c Packed brown sugar
    1/2 c Apple butter
    1/3 c Pure maple syrup
    1/3 c Apple cider
    1/3 c Nonfat plain yogurt
    3 tb Canola oil
    MAPLE GLAZE:
    1 1/4 c Confectioners' sugar
    1 ts Pure vanilla extract
    1/3 c Pure maple syrup

    Preheat oven to 400 degrees. Coat the molds of a mini-Bundt pan
    with nonstick cooking spray or oil. Sprinkle with white sugar,
    shaking out the excess.

    In a mixing bowl, whisk together flour, baking powder, baking
    soda, salt, and cinnamon; set aside. In another bowl, whisk
    together egg, brown sugar, apple butter, maple syrup, cider,
    yogurt and oil. Add the dry ingredients and stir just until
    moistened. Divide half the batter among the prepared molds,
    spooning about 2 generous tablespoonfuls of batter into each mold.

    Bake for 10 to 12 minutes, or until the tops spring back when
    touched lightly. Loosen the edges and turn the cakes out onto a
    wire rack to cool. Clean the mini-Bundt pan, then recoat it with
    cooking spray or oil and sugar. Repeat with the remaining batter.

    To make maple glaze: In a bowl, combine confectioners' sugar and
    vanilla. Gradually whisk in enough maple syrup to make a coating
    consistency. Dip the fluted side of the "doughnuts" in the glaze
    to coat. Then set them glazed side up on a wire rack over waxed
    paper for a few minutes until the glaze has set.

    They're better than what my supermarket sells. Probably because they
    are freshly baked/fried in house even if they start with frozen
    dough while Loblaws in Yellowknife is 2 days away from whatever
    factory makes and packages theirs.

    The soups and sandwiches are nothing spectacular but are tasty
    enough. I'd rank their sandwiches ahead of Subway and Quiznos.
    Grandma Lee's was superior but that chain is virtually defunct.

    Title: Bakery Shoppe Cheesy Turkey Sandwiches
    Categories: Chicken, Sandwiches, Chilies, Cheese, Turkey
    Yield: 4 Servings

    1 1/2 c Cooked turkey; diced
    1 1/4 c Shredded Cheddar cheese
    1/2 c Celery; finely diced
    1/4 c Mayonnaise
    1/4 c Sour cream
    2 ts Dijon mustard
    2 Green onions; with tops,
    Sliced
    2 tb Green olives; sliced
    4 Rolls OR Hamburger buns;
    -split
    Paprika

    Mix turkey, 1 cup of the cheese, the celery, mayonnaise, sour
    cream, mustard, green onions and olives. Scoop out enough of
    centers from rolls to hold mixture (make crumbs out of centers, if
    desired). Fill hollows in each roll with about 1/2 cup filling,
    Sprinkle tops with remaining cheese and paprika. Put on baking
    sheets. Cover with foil. Bake at 375 for 20 minutes.

    The metro sandwiches (I know I'm plugging a supermarket again) are
    really quite good. I get them when they are marked down to $3 and have
    the "Enjoy Today" sticker on them, but they are still very fresh.

    some pretty decent supermarket donuts... I don't eat them much anymore

    Canadians love Tim Horton's. When you say you don't like it you get

    Well, I can't have anyone's coffee, let alone Timmy's... and I've had
    some pretty decent supermarket donuts... I don't eat them much anymore anyway, kinda lost my taste for them over the years....

    I'll drink it because it's conveniently everywhere and the service is fast,
    but it's far from my favourite. The quality has been noticeably worse since they lost their original supplier years ago.

    Very true! I prefer the McDonalds coffee now as well. (I wonder if we
    should specify McDonalds Canada?) but they do have slow service, it's not
    like the old days where they didn't have such an insane menu.

    Title: SPICY BLACK BEANS WITH ONION AND BACON - BON APPETIT
    Categories: .ba, Main dish, Vegan
    Yield: 4 Servings

    1/4 lb Bacon, chopped
    1 lg Onion, chopped
    2 lg Garlic cloves, chopped
    2 15 to 16-oz cans black
    -beans, rinsed, drained
    1 cn (16-oz) diced peeled
    -tomatoes
    1 cn (4-oz) diced green chilies
    2 1/2 T Chili powder
    2 t Dried oregano
    1/4 t Cayenne pepper

    Cook bacon in heavy large saucepan over medium heat until light brown,
    about 10 minutes. Add onion and garlic and saute until onion is
    translucent, about 5 minutes. Add all remaining ingredients. Simmer
    until chili is thick, stirring frequently, about 12 minutes. Season
    to taste with salt and pepper.

    Very northwest, and yep. I've actually looked at Kelowna but don't have any plans at this time.

    My brother likes their coffee... I can't have coffee anyway... and their

    LOL! Don't worry, we have cooks here but we also have eats! Afterall, what use is a cook with one on to eat it!

    We don't have Tim Horton's down here in Virginia Beach and I'll add an unpopular option that Starbucks is more about $$ than being actually good stuff. Believe it or not, my local 7-11 has some really good coffee.

    Meantime here's a funny for today. It's raining fish.

    2 hawks got into it when one was carrying a fish (I am close enough to the beach for this). Dagnabbit! They dropped it on my roof and my husband had to climb up to knock it down then take it off to a pet safe zone and let the other birds have it before we put the rest in the trash can (if not carried off).

    MMMMM----- Recipe via Meal-Master (tm) v8.06

    Title: Crab Meat Stuffed Flounder
    Categories: Seafood, Stuffing, Breads, Citrus
    Yield: 4 Servings

    1/2 lb Lump crabmeat
    4 Flounder fillets
    1 c Ritz cracker crumbs
    1 lg Egg
    5 tb Mayonnaise
    1 tb Fresh parsley
    1 ts Worcestershire sauce
    1 ts Dry mustard
    1 Lemon
    1/4 lb Butter

    Rinse flounder filets and pat dry.

    In a bowl, mix Ritz cracker crumbs, egg, mayo, parsley,
    Worcestershire sauce, and dry mustard till well mixed.

    Gently fold in the crab meat.

    Place a quarter of the stuffing in each filet, fold over
    and place in a glass baking dish sprayed with non stick
    cooking spray folded side down.

    Place a pat of butter on each roll.

    Bake at 350oF/175oC for 25-30 minuets.

    Serve with lemon wedges.

    UDD Notes: Freezes well, thaw in microwave. Can add a
    bit of fine chopped celery for taste/texture.

    In my last post I mentioned having a can of coconut milk to make
    some tiki drinks. Well then I had a lot of leftover coconut milk so
    I used some of it up in some tapioca pudding.

    The recipe on the package suggested:

    3 tb minute tapioca
    1/3 c sugar
    3 cups milk
    1 tsp vanilla extract
    1 egg

    but there was only 2 tb of tapioca left in the bag so I did this:

    2 tb minute tapioca
    1 tb farina (Cream of Wheat porridge)
    1/4 c Demerara sugar
    1 tb white sugar
    2 3/4 c milk
    1/4 c rum
    1/2 c thick coconut cream
    1 tsp vanilla extract
    1 egg

    The taste was fine but it didn't set up as a firm pudding; it
    remained a medium thick dessert sauce, so I'm pouring it over sliced
    fruit and pound cake. Looking back I realized I did a math error on
    the ratio of liquids to starchy solids. I should have cut back on
    the milk even more when I added both the rum and the coconut cream.

    As the Bald eagle population is restoring, our area is having intresting issues. See, they like southern Hampton Roads. (Virginia beach, Nrfolk and so on). Guy got in trouble for cutting down a tree at his new house. Seems a bald Eagle nested there 7 years ago. Then we had an issue with one nesting apparently along one of our major bridges and later, another nesting set right in the yard of a school.

    Yep. I even saw one taking a rest in the yard of a neighbor last year.

    The Canadian geese are a real problem too.

    Not any more. :( One of my friends is a manager at Macs (Now circle K
    in Ontario) and I sometimes make coffee at his store. It's Mother parkers
    now. :( (In ontario). He accidently lost 3 cases of the seatles best
    dark roast and it ended up in my house. <G> We've since drank it! ;)

    The new Mother Parkers blend is only good when I'm desperate, thankfully
    Mohd agree's with me and on a certain day of the week if I go in to his
    store for a visit I'm told a number. That number means he made /good/
    coffee on a specific machine and if I grab a cup and use that machine
    (even though it says "out of service") I get gooooood coffee. ;)

    I also don't pay for the good stuff as it's not "corp approved". I like
    having friends! <G> The last coffee was a "Dark City Roast" from Toronto
    I told him about and provided. I never know what day I'm going to get the
    good stuff and that's just one more reason I go to his store.
