Pickled Muktuk (variation 1)
categories: Aleut, Alaskan, game, snack, Jonah's revenge
yield: 1 batch

Muktuk (or maktak, whale skin with blubber)
sliced onions
h - brine
2 c white vinegar
5 cloves
2 c water
1 ts black pepper
1 3/4 c sugar
1 ts allspice
4 bay leaves
1 ts pickling spice

Cut maktak in small pieces. Boil 30 min. Add plenty
of salt and pepper while muktuk boils. Rinse in hot
water twice. Put muktuk in jar with lots of onions.

Combine brine ingredients and boil. Pour cooled
brine over maktak and refrigerate for 4-to-7 days
before enjoying.
